Adjust Servings:
250g Fresh pasta You can also use dried (just alter the cooking time and quantity)
1/2 tbsp Butter
1 Large Leek (chopped)
1 Large courgette (skin on, grated)
1 Garlic clove
100g Full fat Creme Fraiche Low fat can sometimes curdle when cooked!
1 handful Parmesan Or equivalent hard vegetarian cheese
to taste Salt and Pepper

    Creamy Pasta with Leeks and Courgette

    Do you ever need a quick recipe at the end of a long day? This is one of my go to meals for when I need something quick and easy but really tasty! Very easy to alter the recipe for more people as well. If you’re not vegetarian you can also add bacon to this recipe which gives the pasta dish another texture and flavour! I’ve used every sort of pasta for this dish; spaghetti, fusilli, macaroni… it’s very versatile so just use whatever you have in or whatever you prefer!

    Heat the butter in a large frying pan and add the chopped leeks. Stir until they are nice and soft but not browned.
    (If you are using dried pasta put this on at the same time as it takes longer than fresh pasta)


    Once the leeks are softened add the grated courgette and the crushed garlic clove, stir this until the courgette becomes softer and slightly browned in places. If you are using fresh pasta start cooking this when you've added the courgette.


    Once the courgette is cooked add the creme fraiche and a handful of parmesan, stir and season to taste.


    When the pasta is cooked, drain and then add it to the pan of leeks and courgette. Stir everything in the pan until all combined and evenly distributed and divide into 2 bowls. Grate some more parmesan (or vegetarian equivalent) over the top if you want and garnish with some basil leaves.
