      Cashew cream is smooth and velvety and ridiculously tasty.

      This is what I am using as a replacement for all things creamy! Instead of creme fraiche, cream, cream cheese etc I always make this. It’s extremely versatile and will go with most things.

      If you have a powerful blender then this is VERY quick. All you have to do is grab a couple of handfuls of cashew nuts and put into your blender, add water to the blender until the cashews are only just covered, add a pinch of salt if you wish and then blend for a few minutes until really smooth and creamy.

      If you don’t have a powerful blender then you can still do this with a food processor but it’s probably best to soak the cashew nuts over night so they are softer.

      Place as many cashew nuts as you like into your blender.
      (if you are pre-soaking your nuts, just put as many cashews as you like into a bowl and cover with water, leave to soak over night)


      Add enough water to just cover the cashew nuts and a pinch of salt if you like.
      (if you are using pre soaked cashews you probably wont need quite as much water, add a small amount and if you feel when you're mixing it needs a bit more liquid just keep adding water until you get the consistency of thick cream.)


      Blend the mixture until smooth, creamy and resembles thick cream.
